l'appelation joshu wagyu, typique de gunma. crédit photo © asiascope.frvous avez sûrement déjà entendu parler de ce bœuf japonais à la viande persillée, à la richesse exceptionnelle qui apparait de plus en plus sur les étals de bouchers ou à la table de restaurants gastronomiques. cependant, l’appellation wagyu ne désigne pas forcément une viande élevée dans l'archipel, selon les critères drastiques qui assurent sa qualité. la société omatsu qui dirige le restaurant an japonaise, importe un authentique joshu wagyu, une viande rare venue de gunma, à l'umami prononcé. la chef propose des plats conçus pour mettre en valeur ce produit unique de manière raffinée et légère. asiascope a testé pour vous cette belle adresse. a l'origine...c'est à m takeshi shimoda, fondateur de la société d'import omatsu que nous devons le concept de ce restaurant spécialisé dans le wagyu. pourtant, rien ne prédestinait cet ancien ingénieur à tokyo gas à s'installer en france. après une carrière dans cette très grande entreprise japonaise qui l'a emmenée au 4 coins du monde, m shimoda a décidé avec omatsu d'importer des produits de qualité issus de son terroir natal de gunma. l'objectif: rendre disponibles aux français des ingrédients de qualité à un prix raisonnable. le bœuf wagyu s'est donc imposé naturellement, parmi d'autres produits comme le miso, le ponzu, mais aussi l'umeshu et le bien sûr le saké. qu'est-ce que le joshu wagyu?la préfecture de gunmacrédit photo: https://www.visit-gunma.jpc'est ainsi que l'on appelle le bœuf élevé dans la préfecture de gunma, localisée dans le honshu. sa production a commencé à l'ère méiji (ndr: époque à laquelle l'archipel s'est ouvert à l'occident. 1868-1912) . c'est une viande tendre, parfumée et persillée, qui doit sa qualité à la pureté de l'eau des montagnes et à la richesse des pâturages de la région. m shimoda importe exclusivement du grade a5, le clas***t le plus haut pour ce type de viande. il s'agit d'une viande: n/a 0.00 n/a
