Description:Tisztelt Látogató! Köszöntünk honlapunkon! Gyermekként Édesanyámtól sokszor hallottam: „Ne játssz az étellel!†késÅ‘bb ahogy nÅ‘ttem a Fater korholt; Ne játssz a tűzzel! Erre most tessék, az egyik legtüzesebb fűszernövénnyel foglalkozunk és készÃtünk belÅ‘le – persze nem játszva – olyan különlegességeket, melyek Magyarországon ismertek, de túlnyomó részt külföldi termékek. Hogy mit is csinálunk? Hát, chilit magyarul ! Ezt a fűszert jellemzÅ‘en Mexikóhoz, a Karib-térséghez, Indiához vagy Thaiföldhöz társÃtjuk. De tény, hogy egyre nagyobb népszerűségnek örvend Európában és hazánkban is! A klasszikus magyar konyha receptjeiben nem találjuk meg , hiszen van nekünk egy méltán világhÃrű erÅ‘s paprikánk , gondolok itt Kalocsára , Szegedre … ! A célunk persze nem is versenyre kelni az „ErÅ‘s Pistával†! Szeretnénk megismertetni nagyközönséggel ezeket az új Ãzeket . Akár nyersen , akár feldolgozva az egészen apró Madár chilitÅ‘l a világ egyik legerÅ‘sebbjéig a Szellem chiliig . De ez már egy új történet , és mivel terjedelmes kapott egy külön linket ! Termesztünk még különleges /Naná!/ szÃnű és formájú paradicsomokat melyek Ãzükkel is lenyűgözik a kÃváncsi kóstolókat! Eddig rendre többes számban Ãrtam – készÃtünk , csinálunk , termesztünk – hiszen családi vállalkozásként működve próbáljuk megismertetni magunkat és még inkább termékeinket ! Szeretnénk átfogó képet nyújtani a chilikrÅ‘l , kitérve a jótékony hatásaira , az általunk termelteket egy-két gondolattal bemutatjuk , illetve – bár én inkább csak gasztromókus vagyok – ajánlunk recepteket is ! A chilik erÅ‘sségét a Scoville-skála segÃtségével határozzák meg. A Scoville teszt lényege , hogy a vizsgált paprikából oldatot készÃtenek , amit addig hÃgÃtanak cukros vÃzzel , amÃg a csÃpÅ‘s Ãzt érezni lehet . A csÃpÅ‘séget tehát a hÃgÃtás mértéke határozza meg . Például : a Habanero esetében ami akár 350.000 SHU ( Scoville egység ) értékű kivonatot is produkálhat , több mint 350.000 – szeresére kell hÃgÃtani ahhoz , hogy ne lehessen érezni erejét. Ezek a mérések viszont relatÃvak , mivel az egyes fajtákon belül is komoly eltérések lehetnek . Bár aki ezt „hagyományos†kóstolással meg tudja állapÃtani , az legény a talpán ! Ãme a Scoville skála amelyen feltűntettek többféle chilit , a magyar erÅ‘s paprika ezen a skálán a 20.000-es magasságban lenne megtalálható.
