Good Cookery | Keep up-to-date with the latest food and drink news, restaurant reviews and food trends
There is a lot to be angry, stressed or worried about in the world. Because we of the Voraciously team are focused on food, when times are tough, we tend to navigate to cooking to find any note of peace and stability. (Cats and dogs help, too.) [[Here are some photos of gigantic pumpkins for no other reason than to distract you from reality] But what do we cook when times are tough, the world tougher? When kneading a batch of rolls recently, we were reminded that cooking something that requires above-average use of your hands can be quite restorative. (Plus, then we had bread!) Please note, though: These are not recipes to relieve you of rage. We are not saying those thoughts and emotions are something to be fixed, as if something is wrong with you. Rather, these are recipes to help you channel that energy and do something blessedly trivial with it. Because no matter how frustrated you feel, you still have to eat. Chicken Scaloppine With Apples in Apple Cider Sauce, above. Pound boneless, skinless chicken *** with a rolling pin. Do so firmly but carefully, so that the resulting cutlets are evenly thin. (We suggest you do this between sheets of plastic wrap or inside a large zip-top bag, unless you find picking wax paper bits away from raw chicken to be meditative.) Best for releasing feelings of aggression when it would be impolite to throttle bottles of glass onto the ground. The cider, apple and onion sauce tastes like an autumn evening. (Scott Suchman for The Washington Post) Grandma Webster's Dinner Rolls. You'll use your hands to mix this dough together — it'll be sticky and frustrating at first! — but soon it will come together and become more workable as you knead for 5 to 10 minutes. Allow the dough to rise for a few hours before shaping into rolls, arranging in a pan and letting the dough rise one more time. The time commitment, though mostly inactive, suggests this is well suited for a lingering, pent-up frustration that you'd like to stew about. Your reward is tender, pull-apart rolls. (T. Susan Chang) Smacked Cucumber Salad. You may have seen versions of this touted elsewhere; those versions may have also cited the therapeutic feelings that arise from smacking a cucumber into bite-size bits. Well, it's all true! This is a delightful salad, right down to its salty, slightly spicy sauce. Perfect for short outbursts or when you suddenly and maddeningly think of the perfect, searing comeback that you wish you'd thought of earlier. (Deb Lindsey for The Washington Post) Lentil and Macaroni Soup With Swiss Chard. Wouldn't it be nice to clench something so tightly with your hands that it crushes into tiny bits? Enter canned whole tomatoes, which you crush one at a time as you add them to a pot of this nourishing, healthful soup. Leftovers keep well for a few days, or leave out the pasta and freeze it for up to three months. (Deb Lindsey for The Washington Post) Chickpea and Pomegranate Salad. There are many ways to seed a pomegranate, but this one is particularly nice if your boxing sessions aren't cutting it: Cut the fruit horizontally in half, then hold one half cut side down over a bowl of water (set in the sink). Use a large spoon to whack the bottom of the fruit until you feel seeds falling out, through your fingers, into the water. Take care not to hit yourself; be decisive in your thwacking. Then stir together this simple, herb-flecked salad with a tangy dressing. More from Voraciously: As the Instant Pot goes mainstream, a crush of cookbooks follows — and hits every niche Achieve peak October with these pumpkin and winter squash recipes 11 ingredients to add to your pantry and channel Ottolenghi's favorite flavors .

simonbutterworthp ography
WELCOME TO SIMON BUTTERWORTH P OGRAPHY. This site is designed to showcase my landscape p ographs. My love of the great outdoors has been p ed down to me by my father and grandfather, who were both keen outdoorsmen. My grandfather was one of the legendary Manchester Ramblers who fought for country side access during the 1930's and 40's. My own love of wild places led me to make a permenant move to Scotland in 2002 so that I could spend more time in the greatest wilderness areas that Britain has to offer. It was while do enting my travels in the Scottish Highlands that p ography became more and more important to me. It wasn't long before my trips were being planned around p ographing the most scenic places at the best times of day; landscape p ography has grown into something of an obsession since then. I plan my p ographic excursions around 'the day job' as a cl ical musician. I often spend the afternoons before evening concerts scouting around new areas, looking for potential images to be captured at some future date. What I look for in my images is very hard to define - I know when I see it, but it's difficult to describe in words. Perhaps the closest I can get is: simplicity with a surreal edge. One way of acheiving this end is by using long exposures; this technique ac ulates time in a single image, often providing unexpected and unusual results. Simple scenes can become magical as water and clouds blur during the seconds or minutes the exposure is running. Many images are just the result of making my way around the lesser known areas of Scotland with my eyes wide open. The dedicated p ographer looks for potential images all the time, whether driving along the motorway or walking across the city in the of night - you just never know what you might find if your mind is receptive to the environment around you. I don't limit myself to p ographing scenes of wild beauty - I am also drawn to buildings, factories, and civil engineering projects such as dams, bridges and roads. Under the right conditions these things can become fascinating and even beautiful. The transforming factor for all subjects is light; it is the single most important element in any landscape p ograph. As film Director, Aaron Rose said 'in the right light, at the right time, all things are extraordinary.' To capture the finest light takes planning and dedication - I will often wait for weeks or even months to capture a scene under the optimum lighting conditions. AWARDS 2007. Highly commended. UK Landscape P ographer of the Year Competition. 2008. Two images highly commended. UK Landscape P ographer of the Year Competition. 2008. First prize winner. UK Landscape P ographer of the Year Competition. 2008. Winner. Paramo Award for Best Mountain picture. UK Landscape P ographer of the year competition. Images are represented world wide by Oxford Scientific P ographic Agency. EQUIPMENT I recieve lots of emails from around the world asking me what equipment I use. So here goes. (If you are not a p ographic geek please look away now). Camera: Canon 1DS MKIII Lenses: 16-35mm, 24-105mm, 70-200mm, 2X teleconverter, 24mm Tilt/Shift. All Canon L series. Tripod: Gitzo Mountaineer. I currently have an exhibition of p ographs showing at Glasgow City Hall until further notice. All the pictures in this exhibition are for sale. Non UK + £5 20 x 30 inches - Unframed £65 inc P&P. Non UK + £5 30 x 40 inches - Unframed £85 inc P&P. Non UK + £5 30 x 40 & 20 x 30 prints are made on Fuji Crystal Archive p ographic paper which produces beautifully smooth, finely detailed, and richly coloured images. 16 x 23 are made on the highest quality semigloss paper. The printed area is usually an inch smaller than the quoted print size. This gives the picture framer an area to work with without losing parts of the image. PAYMENT should be by cheque (UK orders), or Paypal (non UK only). Orders will normally be completed within two weeks. If you would like to buy an image from the website that is not featured at City Hall, please get in touch with me by email. Prices for these prints will be the same but delivery times may be a little longer. Glasgow City Hall is a great place to visit, it has a coffee shop, a bar and several performance areas including a 1200 seater auditorium. The doors are open all day, and you can often take in a concert or a recital, as well as eating at one of the numerous top quality retaurants nearby - my own favourite is Cafe Gandolfi, just opposite the stage door entrance in Albion Street. If you have any questions regarding any of the features on this site please feel free to email me using the link. Simon
